Lemon Tart


Ingredients for Tart

Flour - 100gms

Frozen butter - 50 gm

sWater (chilled) - 40 ml

‘Pik” Baking powder - ½ tsp

Salt - a pinch

Ingredients for Lemon Curd Filling

Sugar - 115 gms

Lime juice - 1 teaspoon

Butter - 55 gms

Egg - 1


Method for Tart

  • Sieve the flour, baking powder and the salt.
  • Grate the butter into the flour and rub it in till breadcrumb consistency.
  • Make a well in the center and add the chilled water.
  • Fold the dough with your hands. No kneading.
  • Refrigerate for ½ hour.
  • Remove and roll out then fold and again roll out. Do it about 3-4 times making sure the dough does not get thick and heavy at any stage.

Method for Filling

  • Grate the yellow part of the lime skin.
  • Melt butter and the sugar in a pan.
  • Add juice and rind of the lemon.
  • Remove from fire and beat in the egg.
  • Return to the fire and cook on a double boiler until thick.
  • Cool the mixture.


  • Roll out the dough into a chapatti.
  • Place on greased pie plate or individual tarts.
  • Pierce with a fork or place beans on it and blind bake.
  • Spoon the lemon curd filling on the tarts.
  • Put it back in the oven for a few minutes, Serve hot or cold.
