Banana Chocolate Sundae

Ingredients :-
  1. Vanilla Ice Cream,
  2. strawberry ice cream,
  3. bananas,
  4. pik whipped topping,
  5. chocolate sauce,
  6. cherries for decoration.
Method :
Step 1
In individual stemmed glasses fill a scoop of the vanilla ice cream and strawberry ice cream.

Step 2
Place sliced bananas on top of the ice creams.

Step 3
Top it with the chocolate sauce, whipped cream and a cherry.

Chocolate mousse

Ingredients :-
  1. milk – 1 liter,
  2. condensed milk – 1 tin,
  3. pik cocoa – 3 heaped tablespoon,
  4. pik whipped topping – 50g,
  5. chilled milk (for whipped topping) – 100ml
  6. gelatin – 3 to 4 teaspoons (15g – 20g)
  7. vanilla essence – few drops
  8. dark chocolate (optional) – 20g
Method :

Step 1
Pour the milk in a thick bottom pan and add the Pik Cocoa powder and boil.

Step 2
Once it is boiling, reduce the heat and let it simmer for 2-3 minutes.

Step 3
Add Condensed Milk and stir gently so that it does not stick to the bottom.

Step 4
Add chocolate (if using)

Step 5
Leave to cool, add vanilla essence

Step 6
Sprinkle the gelatin over 75ml of water, leave to set. Heat gently till the gelatin dissolves.

Step 7
Carefully add the gelatin to the chocolate custard.

Step 8
Sprinkle the Pik Whipped Topping on chilled milk and beat till thick.

Step 9
Gently fold in half the beaten whipped topping.

Step 10
Pour into individual glasses or a bowl.

Step 11
Set in the refrigerator.

Step 12
Top with balance whipped topping and garnish with grated chocolate or cherries.

lemon tart

Ingredients :-
  1. flour – 100gms,
  2. Butter – 50gms,
  3. water (chilled) – 40ml,
  4. pik baking powder – 1/2tsp,
  5. salt – a pinch
Method :

Step 1
Sieve the flour, baking powder and the salt.

Step 2
Grate the butter into the flour and rub it until breadcrumb consistency.

Step 3
Make a well in the center and add the chilled water.

Step 4
Fold the dough wth your hands. No kneading.

Step 5
Refrigerate for 1/2hour.

Step 6
Remove and roll out then fold and again roll out. Do it 3-4 times making sure the dough does not get thick and heavy at any stage.

Ingredients lemon curd filling :-
  1. sugar – 115gms,
  2. lime juice – 1/2tsp,
  3. butter – 55gms,
  4. egg – 1
Method for filling :

Step 1
Grate the yellow part of the lime skin.

Step 2
Melt butter and the sugar in a pan.

Step 3
Add juice and rind of the lemon.

Step 4
Remove from fire and beat in the egg.

Step 5
Return to the fire and cook on double boiler until thick.

Step 6
Cool the mixture.

Assembling :

Step 1
Roll out the dough into a chapatti.

Step 2
Place on greased pie plate or individual tarts.

Step 3 
Pierce with a fork or place beans on it and blind bake.

Step 4
Spoon the lemon curd filling on the tarts.

Step 5
Put it back in the oven for a few minutes. Serve hot or cold.

hot chocolate fudge

Ingredients lemon curd filling :-
  1. chocolate sauce – 1/2cup,
  2. chocolate milkshake – 1 litre,
  3. chocolate ice cream – 1/2 litre,
  4. vanilla ice cream – 1/2 litre,
  5. nuts chopped – 1/4 cup.
ASSEMBLING :

Step 1
Put 5 tablespoons of chocolate sauce in a tall glass and twirl it to coat the sides of the glass.

Step 2
Pour 3/4 cup of chocolate milkshake or cold coffee.

Step 3
Next put in a big scoop of chocolate ice cream, topped with a bid spoon of vanilla ice cream.

Step 4
Top it up with 1 tablespoon of hot chocolate sauce and chopped nuts.

Chocolate Sauce Ingredients :-
  1. cocoa – 2 tbsp,
  2. sugar – 8 tbsp,
  3. water – 1/2 cup,
  4. butter – 1 tbsp.
Method :

Steps 
Mix all the ingredients in a pan and heat till it melts. Use it hot or cold.

orange surprise

Ingredients :-
  1. pik orange jelly crystals (with gelatin) – 1 pkt,
  2. orange/vanilla ice-cream – 1/2 litre,
  3. pik whipped topping – 1 pkt (made with 125ml milk),
  4. orange segments – a few.
Method :

Step 1
Make a past eof the Pik Orange Jelly Crystals (with Gelatin) with 2 spoons of warm water ina dish.

Step 2
Put 2 cups of water to boil in a pan.

Step 3
Pour the hot water on the jelly paste, stirring all the time, to avoid the jelly sticking to the sides and bottom of the mould.

Step 4
Keep stirring till it cools. Semi -melt the ice-cream. If using ice-cream mix, make the ice-cream till the beating stage. Use once light, fluffy and doubled in quantity.

Step 5
Beat the Pik whipped topping with 125ml chilled milk as per the directions on the packet.

Step 6
Add cooled but liquid jelly and whipped cream to the softened ice cream.

Step 7
Pour into a dish and set. Decorate with orange segments and cream.

cassata delight

Ingredients :-
  1. pik cake mix (vanilla) – 1 pkt,
  2. pik mango ice cream – 1 pkt,
  3. pik vanilla ice cream – 1 pkt,
  4. pik strawberry ice cream – 1 pkt,
  5. chocolate sauce – 1/2 cup,
  6. pik whipped topping – 1 pkt,
  7. chopped nuts – 1/2 cup.
Method :

Step 1
Prepare the ice cream as per instructions on the packet.

Step 2
Prepare the whipped topping as per directions on the packet.

Step 3
Prepare the cake as per directions on the packet.

Assembling :

Step 1
In an ice cream tin, place a slice of the cake at the bottom. Press it in the tin.

Step 2
Semi melt the strawberry ice cream.

Step 3
Place the strawberry ice cream on the cake and place it in the freezer.

Step 4
Similarly set the other two flavours when the previous one is semi set. Cover and freeze.

Step 5
Once frozen take it out of the mold and slice it.

Step 6
Pour chocolate sauce and whipped cream on it. Top it with nuts.

Trifile pudding

Ingredients :-
  1. Pik jelly crystals – 1 pkt,
  2. milk – 1 litre,
  3. pik custard powder – 6 tbsp,
  4. sugar – 6 tbsp,
  5. pik cake mix – 1 pkt,
  6. fresh fruits – 1 cup,
  7. nuts – 4 tbsp,
  8. pik whipped topping / ice cream
Method :

Step 1
Boil the milk with the sugar in a heavy bottom pan. Make a paste of the custard powder and a little milk (reserved from the 1 litre).

Step 2
Once the milk has boiled, reduce the flame and pour the paste in a thin stream, stirring all the time. Cook for a minute or two till it gets thick.

Step 3
Cool and add the fresh fruits to the custard. Prepare the cake as per directions on the packet.

Step 4
Prepare the jelly as per the instructions on the packet. Slice a cake horizontally and press into a large serving bowl.

Step 5
Pour the jelly over the cake and leave to set in the refrigerator. Add the nuts and pour the custard with fruits on top. Set again.

Step 6
Remove and decorate with whipped topping (made as per the directions on the apcket) or top it with the ice-cream.
